STRAWBERRY CREAM CAKE


Ingredients for cake:
  • Flour 2 cups
  • Baking soda 1 tsp
  • Sugar 1¾ cup
  • Butter 100 gms
  • Oil half cup
  • Eggs 5
  • Desiccated coconut half cup
  • Almonds grinded 1 cup
  • Butter milk 1 cup
  • Strawberry puree half cup
  • Strawberry essence half tsp
  • Vanilla essence half tsp
Ingredients for strawberry cream:
  • Whipped cream 2 cups
  • Icing sugar half cup
  • Strawberries puree 4 tbsp
  • Cream cheese 200 gms
Method for cake: 
  • In one large bowl add flour baking soda, coconut and almonds. Keep aside. In another bowl beat butter with sugar till creamy. Start adding in 5 eggs one at a time. Heat in oil with essence and strawberry puree. Start adding in dry ingredients alternating with butter milk starting and ending with flour. Pour mixture into well greased 9 inches pan baked on 180 degrees for 35 mins. 
  • Method for frosting: Beat cream and keep aside. Beat 200 gms cream cheese with half cup of icing sugar, strawberry puree, fold in whipped cream. Spread the cream in center of the cake. Cover with second cake. Decorate the whole cake with icing and strawberries.
