KEYLIME POUND CAKE


INGREDIENTS:
  • Flour 1.5 cup
  • Baking powder 1.5 tsp leveled
  • Salt quarter tsp
  • Sugar 1 ¼ cup
  • Butter half cup
  • Shortening quarter cup
  • Eggs 3 separated
  • Butter milk half cup
  • Vinegar 1 tbsp
  • Lemon juice 3 tbsp
  • Lemon zest 1 tsp
  • Vanilla essence 1 tsp
METHOD:
  • Grease a loaf pan. Pre heat oven to 180 degrees. Sieve together flour, baking powder and add in salt. Beat together butter, shortening and sugar. Add yolks 1 at a time beating well until blended. Add dry ingredients alternating with butter and milk starting and ending with flour. Mix in lemon juice, zest and keep aside. In another bowl beat egg white stiffed with quarter cup sugar until stiff. Fold the egg whites into butter mixture. Pour batter into prepared pan bake for 45 mins. Cool cake for 10 mins and serve.
