TROPICAL MUFFINS
 

Ingredients:
  • Butter 4 oz.
  • Brown sugar 9 oz.
  • Pineapple Essence ¼ tsp
  • Banana Essence ¼ tsp
  • Flour 9 oz.
  • Baking Soda 1 tsp
  • Eggs 2
  • Baking Powder 1 tsp
  • Cake Spice 1 tsp
  • Desiccated Coconut ½ cup
  • Yogurt ½ cup
  • Banana 2
  • Pineapple ½ cup
Ingredients for Topping:
  • Sugar 2 tbsp
  • Coconut 3 tbsp
Method:
  • Sieve together flour, baking soda and baking powder and cake spice.Beat butter and sugar with both the essences until creamy. Gradually add in eggs 1 at a time and beat well. Fold in half the flour then add in the mashed bananas, chopped pineapples, coconut, yogurt and mix well.Fold in the remaining flour. Pour mixture into paper liners in muffin tray. Bake on 180 degrees for 20 minutes.
Method for topping:
  • Mix both ingredients together.Pour on top of the muffins and then bake.
