COUNTRY PECAN PIE


Ingredients:
  • Dark corn syrup 1 ¼ cup
  • Eggs 4
  • Brown sugar half cup
  • Melted butter quarter cup
  • Flour 3 tsp heaved
  • Vanilla essence 1.5 tsp
  • Pecan halves 1.5 cup
Ingredients for short crust pastry:
  • Flour 8 ounces
  • Butter 4 ounces
  • Sugar 2 ounces
  • Baking powder half tsp
  • Egg yolk 1
  • Chilled water to knead
Method:
  • Pre heat oven to 180 degrees. Make short crust pastry by beating together butter and sugar add in yolk. Fold in flour and baking powder. Mix slightly. Form into a dough with chilled. Leave to rest in fridge for 30 mins. Remove. Roll the dough into a 9 inch round. Spread with filling. Bake for 45 mins until golden. Cool completely on wire rack.
Method for filling:
  • Combine corn syrup, eggs, brown sugar and butter in a large bowl. Beat for 2 mins until blended. Steer in flour and vanilla. Pour into crust. Arrange pecans on top and bake.
