COUNTRY PECAN PIE
Ingredients:
- Dark corn syrup 1 ¼ cup
- Eggs 4
- Brown sugar half cup
- Melted butter quarter cup
- Flour 3 tsp heaved
- Vanilla essence 1.5 tsp
- Pecan halves 1.5 cup
- Flour 8 ounces
- Butter 4 ounces
- Sugar 2 ounces
- Baking powder half tsp
- Egg yolk 1
- Chilled water to knead
- Pre heat oven to 180 degrees. Make short crust pastry by beating together butter and sugar add in yolk. Fold in flour and baking powder. Mix slightly. Form into a dough with chilled. Leave to rest in fridge for 30 mins. Remove. Roll the dough into a 9 inch round. Spread with filling. Bake for 45 mins until golden. Cool completely on wire rack.
- Combine corn syrup, eggs, brown sugar and butter in a large bowl. Beat for 2 mins until blended. Steer in flour and vanilla. Pour into crust. Arrange pecans on top and bake.
