CHICKEN PUFFS
Ingredients:
- Butter 2 oz.
- Water 1 cup
- Flour 4 oz.
- Eggs 3 - 4
- Salt ¼ tsp
- Black Pepper ½ tsp
Ingredients for Filling:
- Flour 2 oz.
- Butter 2 oz.
- Milk 1 ½ cup
- Salt ½ tsp
- Black Pepper ½ tsp
- Mustard ½ tsp
- Chicken (Boiled, shredded) 1 cup
- Cheddar Cheese (Grated) 4 tbsp
- Capsicum (Finely chopped) ½
- Parsley (Finely chopped) 1 tbsp
Method for Puffs:
- In a saucepan, cook butter and water.Once it boils, remove from heat. Add in flour, mix and again put on the stove. Cook stirring continuously till mixture leaves the sides of the pan and forms a ball in the center. Remove from the heat. Gradually add in 1 egg at a time, beating well after each addition. On a greased tray pipe out small swirls, leaving one inch space in between. Bake in a preheated oven on 190 C for 15 minutes. Then bake on 160 C for another 10 minutes. Remove from the oven and cool. Cut puffs from center. Fill with prepared filling and serve.
Method for Filling:
- In a saucepan, add all the ingredients except chicken, cheese and capsicum.Cook stirring until the mixture thickens. Remove from heat. Add chicken, cheese and capsicum. Fill in puffs.
