MOIST ORANGE CAKE
Ingredients:
- Flour 2 cups
- Caster Sugar ¾ cups
- Almonds (Ground) ½ cup
- Baking Powder 2 tsp
- Baking Soda ¼ tsp
- Buttermilk ¾ cup
- Orange Juice ¾ cup
- Eggs 2
- Butter 6 oz.
- Orange Zest 1 tbsp
- Orange Essence 1 tsp
Method:
- Beat butter with sugar until creamy.Add eggs one at a time. Beat in zest essence and start adding in sieved flour with baking powder and soda. Alternate this with buttermilk and orange juice. Pour batter in an 8 inch greased pan and bake for 30 minutes at 180 C. Remove from the oven, and soak the cake with prepared syrup while cake is still hot.
Method for Syrup:
- Heat all the ingredients for the syrup in a saucepan until the sugar melts.Prick the cake with a wooden skewer. Pour the syrup on hot cake. Chill and serve.
