Coconut Biscuits
Ingredients:
- First beat together 250 g butter, ½ tsp coconut essence and 1 egg yolk.To this add 4 oz icing sugar and beat well.Then take 2 ½ cups of coconut and add to the butter mixture.After this add 4 tbsp flour and whisk slightly so that the mixture turns into a crumb-like texture.Now with your hands shape the crumbs into a dough, roll, wrap in paper and leave it in the fridge.Then slice this roll and press slightly. Roll the dough in the remaining ½ cup of coconut and give a round shape.In the end, line these cookies in a baking sheet and bake at 180 C for 20 minutes.
