Spanish omelet


Ingredients
  • Eggs 4
  • Milk 2 tbsp
  • Capsicum 1 finely chopped
  • Onion 1 finely chopped
  • Tomato 1 finely chopped seeds removed
  • Mushrooms 4 sliced
  • Tikka chunks 4 tbsp
  • Grated cheese 4 tbsp
  • Salt ½ tsp
  • Pepper ½ tsp
Method
  • Beat the eggs with salt, pepper and milk, heat oil, pour the eggs and tilt the frying pan. Lift edges to let the egg roll under, sprinkle capsicum, onion, tomato, mushrooms and tikka chunks on top and press gently. Sprinkle cheese and covered the pan, cook till cheese melts, serve hot with toast.
