Perfect Chocolate Cupcakes
Ingredients:
- 1/4 cup cocoa powder
- 1/2 cup hot water
- 1/2 cup buttermilk
- 1 cup sugar
- 1 egg
- 1/4 cup oil
- 1 tsp vanilla
- 1 1/4 cup flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- Add the cocoa powder to a medium size bowl and pour in the cup of hot water. Whisk until the cocoa is completely dissolved.Next, add the buttermilk to cool down the mixture, then add sugar and whisk until all the ingredients are combined.Now add the eggs, oil, and vanilla and mix again.In a separate bowl, stir the flour, baking powder, baking soda, and salt. Whisk this into the wet mixture until no lumps remain.Stir in the heavy cream until evenly mixed in.Pour the batter in cupcake tins and bake at 180C for 12 to 20 minutes.
