Banana and toffee cup cakes


Ingredients for cup cakes
  • Butter softened 4 ounces
  • Brown sugar 4 ounces
  • Eggs 2
  • Self raising flour 4 ounces
  • Banana 1 mashed
Ingredients for topping
  • Butter 4 ounces
  • Condensed milk ½ cup
  • Caster sugar 2 ounce
  • Golden syrup 1 tbsp
Method
  • Preheat oven to 190 degree C, beat butter and sugar in a bowl until light and fluffy, add in the eggs and flour, beat until mixture smooth, fold in the mashed banana, divide the mixture between paper cases, bake for 15 minutes, remove from oven on wire rack to cool.
Method for toffee topping
  • Place the butter in a large bowl, melt in micro for 30 seconds, stir in the condensed milk, sugar and golden syrup. Cook the topping in the micro for 4 to 5 minutes, stirring after every minute until it is pale golden or cook in sauce pan then spread over cup cake using a knife and scatter some chocolate sprinkles.
