Foily chicken rice
Ingredients
- Rice boiled ½ kg
- Chicken boneless ½ kg cut into julienne
- Ginger julienne 2 tbsp
- Soya sauce 2 tbsp
- Chili oil ¼ cup
- Green chilies sliced 4
- Carrots ½ cup thinly sliced
- Capsicum 1 thinly sliced
- Spring onion finely chopped 1 cup
- Salt 1 tsp
- White pepper ½ tsp
- Chili sauce 2 tbsp
- Ketchup ¼ cup
- Corn flour 2 tbsp mixed in ¼ cup water
Method
- Heat chili oil add ginger julienne, chicken julienne with all the seasonings and fry well, add 2 cups water, cover and cook till boiling, thickens with corn flour paste, fold in capsicum, carrot and green chili, take a large piece of foil, put half rice, spread chicken mixture, spring onion chopped, top with remaining rice, drizzle with 2 tbsp chili oil, wrap and bake for 20 minutes on 180 degree C, serve hot.
