Bean burritos
 

Ingredients for tortillas
  • Flour 2 cups
  • Salt ¾ tsp
  • Baking powder ½ tsp heaped
  • Oil 2 tbsp
  • Warm water as required to knead
  • Black kidney beans canned 1 cup
  • Cheddar cheese grated 1 cup
  • Iceberg lettuce shredded 1 cup
Ingredients for mince
  • Mince 8 ounce
  • Onion 2 tbsp chopped
  • Chili powder 1 tsp
  • Salt ¾ tsp
  • Cumin crushed ½ tsp
  • Garlic paste 1 tsp
  • Oil 2 tbsp
  • Tomato paste 2 tbsp
  • Water 1 cup
Method for tortillas
  • Knead the dough, divide into equal portions, shape into balls, roll into 8 inches round, cook on tawa until done.
Ingredients for mince
  • Heat oil add onion and garlic, fry for 2 minutes, add mince with all the seasonings, tomato paste and water, cook cover till mince tender and dry.
To serve
  • Spread tortillas, cover with mince about 2 tbsp beans, fold sides roll, arrange them in a baking dish, cook until hot about 10 minutes, remove, garnished top with lettuce, grated cheddar cheese.
