Bean burritos
Ingredients for tortillas
- Flour 2 cups
- Salt ¾ tsp
- Baking powder ½ tsp heaped
- Oil 2 tbsp
- Warm water as required to knead
- Black kidney beans canned 1 cup
- Cheddar cheese grated 1 cup
- Iceberg lettuce shredded 1 cup
- Mince 8 ounce
- Onion 2 tbsp chopped
- Chili powder 1 tsp
- Salt ¾ tsp
- Cumin crushed ½ tsp
- Garlic paste 1 tsp
- Oil 2 tbsp
- Tomato paste 2 tbsp
- Water 1 cup
- Knead the dough, divide into equal portions, shape into balls, roll into 8 inches round, cook on tawa until done.
- Heat oil add onion and garlic, fry for 2 minutes, add mince with all the seasonings, tomato paste and water, cook cover till mince tender and dry.
- Spread tortillas, cover with mince about 2 tbsp beans, fold sides roll, arrange them in a baking dish, cook until hot about 10 minutes, remove, garnished top with lettuce, grated cheddar cheese.
