Bangalori Karhi Biryani


Ingredients:
  • Mutton 3/4kg
  • Rice ½ kg
  • Ginger garlic 1tbsp+2 tbsp
  • Salt
  • Coriander leaves chopped
  • Green chilies 8-10
  • Garam masala: Cloves 5-6. Cinnamon 2 sticks
  • Podina handful
  • Yogurt ½ kg
  • Milk 1 cup
  • Saffron ¼ tsp
  • Oil ½ cup
  • Onion fried 1cup
  • Potatoes 3-4
  • Turmeric 1pinch
  • Mace ¼ tsp
  • Cumin 1 tbsp
  • Papaya 1 tbsp
Method:
  • Marinate mutton with ginger garlic, 2 tbsp curd and salt and papaya and leave it over night in fridge,Heat oil, brown onion, remove and fry aloo.Remove ½ oil and add marinated mutton, chopped hara masala and garam masala, remaining ginger garlic and yogurt with haldi, zeera.Sprinkle on top, ½ fried onion and aloo.Leave it on high flame for5 mins top with ½ boiled rice Sprinkle milk with saffron, juice of lemon,jaiphal,remaining onion on top.Seal with aata dough and leave it on high flasme for 10mins and then put it on dum for 20mins.
