Roast chicken with brown sauce


Ingredients
  • Chicken 1 kg cut into 8 pieces
  • Ginger garlic paste 1 tsp
  • Onion chopped 3 tbsp
  • Salt 1 tsp heaped
  • Chili powder 1 tsp
  • Black pepper ½ tsp
  • Ketchup 3 tbsp
  • Mustard powder ½ tsp
  • Fries and boiled vegetables to serve
Method
  • Heat oil fry onion light golden, add chicken, roast for 5 minutes, add ginger garlic paste, salt and pepper, cook for 5 minutes, add 1 cup water, cover and cook till chicken nearly done, lastly add chili powder and ketchup, cook till chicken dry.
Ingredients for brown sauce
  • Flour 2 tbsp
  • Stock 1 cup
  • Butter 1 tbsp
  • Ketchup 1 tbsp
  • Vinegar 1 tbsp
  • Wooster sauce 1 tbsp
  • Hp sauce 1 tbsp
  • Salt and pepper ½ tsp each
Method for brown sauce
  • Heat butter add flour with salt, pepper, add stock with ketchup, Wooster sauce, vinegar, hp sauce, cook for 5 minutes till sauce thick, remove. Place chicken in a dish, top with brown sauce, serve with fries and brown vegetables.
