Apricot flan


Ingredients for flan
  • Butter 6 ounces
  • Flour 6 ounces
  • Sugar 6 ounces
  • Eggs 4
  • Baking powder 2 tsp
  • Vanilla essence 1 tsp
  • Milk ¼ cup
Ingredients for filling
  • Apricots dried 250 gm
  • Water 2 cups
  • Sugar 4 ounce
  • Corn flour 1 tbsp
  • Butter 1 ounce
  • Cream whipped 8 ounces to decorate
Ingredients for custard
  • Milk 1 cup
  • Corn flour 2 tbsp
  • Sugar 3 tbsp
  • Vanilla essence few drops
Method for flan
  • Beat butter, adding sugar gradually till light and fluffy, add eggs, alternating with sieved flour and baking powder mixture, till all eggs have been added, fold in remaining flour, vanilla essence, milk, spread a mixture in a greased flan pan, bake in a preheated oven for 20 minutes, remove and overturn flan on a platter.
Method for filling
  • Cook apricot with 2 cups water and sugar till tender, add corn flour to the apricot mixture with butter, cook till thick, spread custard on the flan, top with apricot mixture, decorate with whipped cream, serve chilled.
