Rainbow Fried Rice
Ingredients
- Rice 300 gm
- Oil 3 tbsp
- Garlic crushed 4 – 5 cloves
- Ginger chopped 1 medium piece
- Sesame seeds 2 tbsp
- Lemon skin 1 tsp
- Bottle gourd 1
- Carrot 1
- Green Capsicum 1
- Red capsicum 1
- Spring onion chopped 2
- Chicken breast (julienne) 2
- Soya sauce 2 tbsp
- Worchester sauce 2 tbsp
- Coriander & mint leaves ¼ bunch
- Egg 2
- Red food color few drops
- Green food color few drops
- Salt to taste
- Black pepper powder ½ tsp
Method
- Boil 300 gm rice and keep aside.Cut all the vegetables (bottle gourd, carrot, green capsicum, red capsicum, spring onion) and 2 chicken breasts into juliennes.Blanch sliced bottle gourd for a few minutes and keep aside.Beat 2 eggs separately, add a few drops of red color in egg and a few drops of green color in other.Now shallow fry both the eggs separately. Heat 2 – 3 tbsp oil in a wok, add in chopped garlic, chopped ginger, lemon skin and chicken. Cook for 1 – 2 minutes.Then add in boiled rice and all the sliced vegetables.Also add salt to taste, black pepper powder, soya sauce, Worchester sauce, chopped coriander and mint leaves. Mix very well.Cut fried egg into strips and add to the boiled rice. Mix well and serve hot.
