Pumpkin Soup


Ingredients
  • Oil 2 – 3 tbsp
  • Onion chopped 1
  • Garlic chopped 2 – 3 cloves
  • Pumpkin (small cubes) ½ kg
  • Chicken stock 1 ½ - 2 Glasses
  • Orange juice ½ cup
  • Thyme ½ tsp
  • Milk ½ cup
  • Salt to taste
  • Black pepper powder ¼ tsp
  • Bread slices 2
Method
  • Heat 2 – 3 tbsp oil in a pan, add 1 chopped onion and 2 – 3 cloves of chopped garlic. Sauté for 1 – 2 minutes.Now add pumpkin and fry well for 3 – 4 minutes.Add chicken stock and cook covered on low flame for 15 – 20 minutes.Now blend the mixture very well. Pour mixture again to the same pan.Then add orange juice, thyme, salt, black pepper powder and milk. Cook for 8 – 10 minutes till soup thickens.Dish it out and serve with toasted bread slices.
