MEXICAN RICE WITH CHICKEN PATTIES


Ingredients:
  • Rice 2 ½ cups
  • Ginger garlic paste 1 tbsp
  • Chopped carrot 1
  • Chopped capsicum 2
  • Red chili flakes 1 tsp
  • Salt to taste
  • Chopped green chilies 4
  • Oil 2 tbsp
For Cheese Patties:
  • Boiled potatoes 2
  • Cottage cheese 2 packets
  • Egg whites 2
  • Chopped coriander 1 bunch
  • Flour 1 tbsp
  • Chopped green chilies 6
  • Oil to fry
  • Crushed black pepper 1 tsp
  • Salt to taste
For gravy:
  • Tomato paste 3 tbsp
  • Carom seeds 1 pinch
  • Onion paste 1
  • Brown sugar 1 tsp
  • Red chili flakes 1 tsp
  • Salt to taste
  • Oil 1 tsp
Method:
  • Boil 2 ½ cups rice and boil it. Drain the water. Take 1 tbsp ginger garlic paste in the pan and sauté it. Add in 1 chopped carrot and 2 chopped capsicum. Cook it and add in 1 tsp red chili flakes and 4 choppe green chilies and cook it. Add in rice and some salt stir fry it and keep it in the pan. Add in boiled potatoes and 2 packets cottage cheese. Mash it together. Add in 1 tbsp flour, salt, red chili flakes, 6 chopped green chilies and 1 tsp crushed black pepper. mix everything. Make kabab and dip it in 2 beaten egg whites. Deep fry them till they are golden brown. Put 1 tsp oil in the pan and add in 3 tbsp tomato paste. Add in chopped garlic, onion, 1 tsp red chili flakes, a pinch of carom seeds and 1 tsp brown sugar cook it and remove it from the stove. Now grease the baking dish and spread the rice in the dish and put the cheese patties over it. Add in tomato puree ove it and bake it for 5-10 m inutes. Serve hot.
