Sicilian pizza


Ingredients for pizza dough
  • Flour 2 cups heaped
  • Milk powder 1 tbsp
  • Egg 1
  • Salt ½ tsp
  • Caster sugar 1 tsp heaped
  • Instant yeast 1 ½ tsp
  • Oil ¼ cup
Method for dough
  • Mix Flour 2 cups heaped, Milk powder 1 tbsp, Egg 1, Salt ½ tsp, Caster sugar 1 tsp heaped, Instant yeast 1 ½ tsp, Oil ¼ cup well in a bowl and knead with Luke warm water as required into a smooth soft dough, leave to rise in a grease bowl covered for 40 minutes.
Ingredient for filling
  • Boneless chicken 1 cup
  • Ginger garlic paste ½ tsp
  • Crushed red pepper 1 tsp
  • Chili powder ½ tsp
  • Lemon juice 2 tbsp
  • Curry powder ½ tsp
  • Orange color pinch
  • Onion sliced 1 small
  • Capsicums ½ cubed
  • Jalapeño pepper 1 chopped
  • Oregano leaves 1 tsp
  • Pizza sauce 4 tbsp
  • Cheddar cheese grated ¾ cup
  • Mozzarella cheese grated ¾ cup
Method
  • Roll the pizza dough ½ inch thick, put in a well greased pizza plate, spread with pizza sauce, sprinkle 2 tbsp cheddar cheese then filling, cover top generously with grated mozzarella and cheddar cheese, keep it cover for 30 minutes, then bake in a pre heat oven for 30 minutes on 200 degree C.
Method for filling
  • Marinate chicken strips with ginger garlic paste, crushed red pepper, chili powder, lemon juice, curry powder, orange color, pan fry in 2 tbsp oil till done, give dum of coal.
Ingredients for pizza sauce
  • Tomato paste 4 tbsp
  • Ketchup 4 tbsp
  • Salt ¼ tsp
  • Oregano leaves ½ tsp
  • Orange color pinch
  • White pepper ¼ tsp
  • Crushed red pepper ½ tsp
  • Crushed garlic 1 tsp
  • Oil 2 tbsp
Method
  • Heat oil add crushed garlic when golden add Tomato paste 4 tbsp, Ketchup 4 tbsp, Salt ¼ tsp, Oregano leaves ½ tsp, Orange color pinch, White pepper ¼ tsp, Crushed red pepper ½ tsp, cook till sauce thick, remove, cool and use as required.
