Pistachio coconut pudding
Ingredients
- Bread 5 slices
- Milk 3 cups
- Eggs 4
- Golden syrup 2 tbsp
- Sugar ¾ cup
- Canned Coconut cream ½ cup
- Pistachio chopped 4 tbsp
- Butter 1 ounce
- Flour 2 tbsp mixed with ¼ cup water
- Coconut essence ½ tsp
Method
- Preheat oven to 180 degree C, grease a square Pyrex dish, beat eggs, golden syrup, sugar, butter, bread, milk, coconut cream, flour, all in a blender for 1 minute, add in essence and pistachio, pour into Pyrex dish, bake for 45 minutes till golden and set, serve it hot or cold.
