Pistachio coconut pudding


Ingredients
  • Bread 5 slices
  • Milk 3 cups
  • Eggs 4
  • Golden syrup 2 tbsp
  • Sugar ¾ cup
  • Canned Coconut cream ½ cup
  • Pistachio chopped 4 tbsp
  • Butter 1 ounce
  • Flour 2 tbsp mixed with ¼ cup water
  • Coconut essence ½ tsp
Method
  • Preheat oven to 180 degree C, grease a square Pyrex dish, beat eggs, golden syrup, sugar, butter, bread, milk, coconut cream, flour, all in a blender for 1 minute, add in essence and pistachio, pour into Pyrex dish, bake for 45 minutes till golden and set, serve it hot or cold.
