Kids Chicken Rice
Ingredients
- Chicken drumsticks 6
- Rice 300 gm
- White vinegar ¼ cup
- Ginger garlic paste 1 tbsp
- All spice powder ½ tsp
- Cumin seeds 1 tsp
- Almond 25 gm
- Pistachio 25 gm
- Fruit cocktail 1 cup
- Oil `for fry
- Oil ¼ cup
- Onion 1
- Salt to taste
Method
• Marinate drumsticks with vinegar, ginger garlic paste, all spice powder and salt to taste. Keep aside.
• Heat oil in a pan, add 1 chopped onion, 25 gm almond and 25 gm pistachios. Fry for 1 – 2 minutes.
• Add in 1 cup fruit cocktail, 1 tsp cumin seeds, 1 ½ glass of water and salt to taste. Cook on low flame.
• Separately heat oil in a wok, add marinated drumstick and fry till golden brown,
• Now add rice to then pan, cook till rice comes on top. Mix well.
• Lastly add fried drumsticks and simmer on low flame for 8 – 10 minutes.
• Dish it out and serve hot.
