Irish Rice


Ingredients
  • Chicken boneless ½ kg
  • Tomatoes 2
  • Onion 2
  • Capsicum 2
  • Rice 300 gm
  • Gram lentils boiled 125 gm
  • Cinnamon 2 sticks
  • Star anise 2
  • Bay leaf 1
  • Onion 1
  • Salt to taste
  • Tamarind pulp 2 tbsp
  • Crushed black pepper 1 tbsp
  • Soya sauce 1 tbsp
  • Worchester sauce 1 tbsp
  • Oil ¼ cup
  • Shashlik sticks as required
Method
  • In a bowl marinated chicken pieces with 2 tbsp tomato ketchup, 1 tbsp soya sauce, 1 tbsp Worchester sauce, salt to taste, 1 tbsp crushed black pepper and 2 tbsp lemon juice.Cut 2 onions, 2 capsicum and 2 small tomatoes into cubes.Thread marinated chicken in shashlik sticks altering with vegetable cubes. Put shashlik sticks in a greased oven tray. Bake in a preheated oven for 15 – 20 minutes.
  • Heat ¼ cup oil in a pan, add 1 chopped onion and sauté for few seconds.Now add 1 bay leaf, 1 star anise and 2 cinnamon sticks. Sauté for 2 minutes.Add 125 boiled gram lentils, 300 gm soaked rice, salt to taste and water as required.
  • Cook till rice starts coming on top. Now put baked chicken sticks on top of rice. Cover with a little boiled rice and simmer on low flame for 8 – 10 minutes. Dish it out and serve hot.
