Irish Rice
Ingredients
- Chicken boneless ½ kg
- Tomatoes 2
- Onion 2
- Capsicum 2
- Rice 300 gm
- Gram lentils boiled 125 gm
- Cinnamon 2 sticks
- Star anise 2
- Bay leaf 1
- Onion 1
- Salt to taste
- Tamarind pulp 2 tbsp
- Crushed black pepper 1 tbsp
- Soya sauce 1 tbsp
- Worchester sauce 1 tbsp
- Oil ¼ cup
- Shashlik sticks as required
Method
- In a bowl marinated chicken pieces with 2 tbsp tomato ketchup, 1 tbsp soya sauce, 1 tbsp Worchester sauce, salt to taste, 1 tbsp crushed black pepper and 2 tbsp lemon juice.Cut 2 onions, 2 capsicum and 2 small tomatoes into cubes.Thread marinated chicken in shashlik sticks altering with vegetable cubes. Put shashlik sticks in a greased oven tray. Bake in a preheated oven for 15 – 20 minutes.
- Heat ¼ cup oil in a pan, add 1 chopped onion and sauté for few seconds.Now add 1 bay leaf, 1 star anise and 2 cinnamon sticks. Sauté for 2 minutes.Add 125 boiled gram lentils, 300 gm soaked rice, salt to taste and water as required.
- Cook till rice starts coming on top. Now put baked chicken sticks on top of rice. Cover with a little boiled rice and simmer on low flame for 8 – 10 minutes. Dish it out and serve hot.
