Oven Baked Marinated Chicken Vegetable


Ingredients
  • Chicken with skin 1 whole
  • Water ½ cup
  • Coriander leaves ¼ bunch
  • All spice 1 tsp
  • Chili powder 1 tsp
  • Turmeric 1 tsp
  • Crushed red pepper 1 tbsp
  • Honey 2 tbsp
  • Worchester sauce 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Lemon juice 2 tbsp
  • Tomato paste 2 tbsp
  • Butter 2 tbsp
  • Papaya paste 3 tbsp
  • Peanut butter 3 tbsp
  • Yogurt 3 tbsp
  • Salt to taste
Method
  • Cut chicken from its back, beat with a hammer to press well.Now marinate with salt to taste and 3 tbsp raw papaya paste. Keep aside.In a bowl put together 2 tbsp honey, 2 tbsp Worchester sauce, 2 tbsp ginger garlic paste, 2 tbsp lemon juice, 1 tsp all spice powder, 1 tbsp crushed red pepper, 2 tbsp tomato paste, 1 tsp turmeric, 1 tsp chili powder, 3 tbsp peanut butter, 3 tbsp yogurt, ¼ bunch of coriander leaves and salt to taste. Mix well.
  • Marinate chicken with the paste, put marinated chicken in a greased oven proof tray.Also add ½ cup water and bake in a preheated oven on 190 degrees for 20 – 25 minutes.Then remove from oven and serve with boiled rice.
