Chimichangas
Ingredients
- Samosa strips ½ kg
- Oil ½ cup
- Sour cream ½ cup
- Cheddar cheese 1 packet
- Onion chopped 1
- Garlic chopped 3 cloves
- Green chilies chopped 2 – 3
- Fresh red chilies chopped 2 – 3
- Capsicum chopped 1
- Boiled potatoes 2
- Chicken breast 2
- Egg 1
- Crushed red pepper 1 tsp
- Salt to taste
- Black pepper ½ tsp
- Celery stick 1
Method
- Heat 2 tbsp oil in a wok, add 3 cloves of chopped garlic and fry till golden brown. Now add 2 chicken breast and fry till its color turn to golden brown.Now add in 1 chopped onion, 2 – 3 chopped green chilies, 2 – 3 chopped fresh red chilies, 1 chopped capsicum, salt to taste, ½ tsp black pepper powder, 1 tsp crushed red pepper, 1 celery stick, 2 boiled potatoes and ½ cup sour cream.Mix very well.
- Then add in 1 packet grated cheddar cheese, mix well and keep aside.Cut samosa strips into 6 inches squares. Put a little chicken mixture in centre and brush sides with beaten egg.Fold into square shape.
- Heat ½ cup oil in a pan, shallow fry prepared chimichangas till golden brown and crisp. Then remove from oil and serve with ketchup or chili garlic sauce.
