Chimichangas


Ingredients
  • Samosa strips ½ kg
  • Oil ½ cup
  • Sour cream ½ cup
  • Cheddar cheese 1 packet
  • Onion chopped 1
  • Garlic chopped 3 cloves
  • Green chilies chopped 2 – 3
  • Fresh red chilies chopped 2 – 3
  • Capsicum chopped 1
  • Boiled potatoes 2
  • Chicken breast 2
  • Egg 1
  • Crushed red pepper 1 tsp
  • Salt to taste
  • Black pepper ½ tsp
  • Celery stick 1
Method
  • Heat 2 tbsp oil in a wok, add 3 cloves of chopped garlic and fry till golden brown. Now add 2 chicken breast and fry till its color turn to golden brown.Now add in 1 chopped onion, 2 – 3 chopped green chilies, 2 – 3 chopped fresh red chilies, 1 chopped capsicum, salt to taste, ½ tsp black pepper powder, 1 tsp crushed red pepper, 1 celery stick, 2 boiled potatoes and ½ cup sour cream.Mix very well.
  • Then add in 1 packet grated cheddar cheese, mix well and keep aside.Cut samosa strips into 6 inches squares. Put a little chicken mixture in centre and brush sides with beaten egg.Fold into square shape. 
  • Heat ½ cup oil in a pan, shallow fry prepared chimichangas till golden brown and crisp. Then remove from oil and serve with ketchup or chili garlic sauce.
