Thai Chicken Mince with Glass Noodles
Ingredients
- Chicken mince 300 gm
- Glass noodles ½ packet
- Carrot (juliennes) 1
- Zucchini 1
- Fresh red chilies 2
- Spring onion 2
- Green chilies chopped 3
- Egg half
- Chicken stock 1 cup
- Garlic 3 – 4 cloves
- Ginger (juliennes) 1 piece
- Wooster sauce 1 tbsp
- Oyster sauce 1 tbsp
- Vinegar 1 tbsp
- Black pepper powder ½ tsp
- Corn flour 2 tbsp
- Soya sauce 2 tbsp
- Oil 3 tbsp
- Oil for fry
- Salt to taste
Method
- In a bowl put together 300 gm chicken mince, half egg, a little salt, ½ tsp black pepper powder and 1 tbsp corn flour. Mix well.Now fry chicken mince till golden brown, remove and keep aside.Cut spring onion, 1 carrot and 1 zucchini into juliennes.
- Now deep fry ½ packet of glass noodles till crisp. Remove and keep aside.Heat 2 tbsp oil in a wok, add chopped ginger and garlic. Sauté for 1 – 2 minutes.
- Now add all the chopped vegetables, 2tbsp soya sauce, 1 tbsp oyster sauce, salt to taste, fried mince, 2 chopped fresh red chilies and 3 chopped green chilies.
- Add 1 tbsp corn flour paste and cook till thickens.Arrange fried glass noodles in a serving platter. Top with prepared mince sauce and serve hot.
