Fish Lime Pine Apple


Ingredients for Fish
  • Fish (cubes) ½ kg
  • Egg 1
  • Garlic paste 1 tbsp
  • Corn flour 2 tbsp
  • Flour 2 tbsp
  • Salt to taste
  • Black pepper ½ tsp
  • Oil 2 tbsp
  • Oil for fry
Ingredients for Sauce
  • Pine apple chopped 1 cup
  • Lime juice 4 tbsp
  • Chicken stock 1 cup
  • Corn flour 2 tbsp
  • Sugar 1 tsp
  • Soya sauce 1 tbsp
  • Worchester shire sauce 1 tbsp
  • Tomato ketchup 2 tbsp
  • Ginger chopped 1 piece
  • Garlic chopped 2 cloves
  • Spring onion chopped 1
  • Capsicum chopped 1
  • Lemon skin ½ tsp
  • Salt to taste
  • Black pepper ¼ tsp
  • Oil 3 tbsp
Method
  • In a pan put together ½ kg fish cubes, 1 egg, 1 tbsp garlic paste, 2 tbsp corn flour, 2 tbsp flour, salt to taste, ½ tsp black pepper and 2 tbsp oil. Mix well.Now deep fry till golden brown, remove from pan and keep aside.
  • In a wok heat 3 tbsp oil, add 1 piece of chopped ginger and 2 cloves of chopped garlic. Fry well till golden brown.Now add 1 chopped spring onion and 1 chopped capsicum. Cook for 2 – 3 minutes.
  • Add in 4 tbsp lime juice, 2 tbsp tomato ketchup, 1 tbsp Worchester shire sauce, 1 tbsp soya sauce, 1 tsp sugar, 1 cup stock, salt to taste, ¼ tsp black pepper and 1 cup pine apple. Cook for 2 – 3 minute.
  • Cook till it comes to a boil, add 2 tbsp corn flour dissolved 2 tbsp water. Cook till thickens.Now add fried fish and ½ tsp lemon skin. Mix well. Serve with boiled rice.
