Fish Lime Pine Apple
Ingredients for Fish
- Fish (cubes) ½ kg
- Egg 1
- Garlic paste 1 tbsp
- Corn flour 2 tbsp
- Flour 2 tbsp
- Salt to taste
- Black pepper ½ tsp
- Oil 2 tbsp
- Oil for fry
Ingredients for Sauce
- Pine apple chopped 1 cup
- Lime juice 4 tbsp
- Chicken stock 1 cup
- Corn flour 2 tbsp
- Sugar 1 tsp
- Soya sauce 1 tbsp
- Worchester shire sauce 1 tbsp
- Tomato ketchup 2 tbsp
- Ginger chopped 1 piece
- Garlic chopped 2 cloves
- Spring onion chopped 1
- Capsicum chopped 1
- Lemon skin ½ tsp
- Salt to taste
- Black pepper ¼ tsp
- Oil 3 tbsp
Method
- In a pan put together ½ kg fish cubes, 1 egg, 1 tbsp garlic paste, 2 tbsp corn flour, 2 tbsp flour, salt to taste, ½ tsp black pepper and 2 tbsp oil. Mix well.Now deep fry till golden brown, remove from pan and keep aside.
- In a wok heat 3 tbsp oil, add 1 piece of chopped ginger and 2 cloves of chopped garlic. Fry well till golden brown.Now add 1 chopped spring onion and 1 chopped capsicum. Cook for 2 – 3 minutes.
- Add in 4 tbsp lime juice, 2 tbsp tomato ketchup, 1 tbsp Worchester shire sauce, 1 tbsp soya sauce, 1 tsp sugar, 1 cup stock, salt to taste, ¼ tsp black pepper and 1 cup pine apple. Cook for 2 – 3 minute.
- Cook till it comes to a boil, add 2 tbsp corn flour dissolved 2 tbsp water. Cook till thickens.Now add fried fish and ½ tsp lemon skin. Mix well. Serve with boiled rice.
