Chicken Vegetarian Moussaka
Ingredients
- Chicken breast 2
- Green capsicum 1
- Red capsicum 1
- Carrot 1
- Onion 1
- Ridge gourd 1
- Brinjal 1
- Tomatoes 2
- Boiled tomatoes 3
- Garlic chopped 4 cloves
- Celery stick 2
- Parsley ¼ bunch
- Button mushroom ½ cup
- Crushed black pepper 1 tsp
- Brown sugar 1 tsp
- Vinegar 1 tbsp
- Black pepper powder ½ tsp
- Tomato paste 3 tbsp
- Olive oil 3 tbsp
- Worcestershire sauce 3 tbsp
- Salt to taste
Ingredients for Topping
- Milk 250 ml
- Nutmeg ground a pinch
- Mozzarella cheese 1 packet
- Beaten egg 3
- Butter 2 tbsp
- Oil 2 tbsp
- Flour 4 tbsp
Method
- Finely chop 1 green capsicum, 1 red capsicum, 1 carrot, 1 medium onion, 2 tomatoes, ¼ bunch of parsley, 2 celery sticks, ½ cup of button mushroom, 1 ridge gourd and 1 brinjal.Now add in a little salt, 4 cloves of garlic, 3 tbsp oil and ½ tsp black pepper powder. Mix well and roast in a preheated oven for 10 – 15 minutes.
- In a pan put together 2 sliced chicken breast, 3 boiled chopped tomatoes, 3 tbsp tomato paste, salt to taste, 1 tbsp vinegar, black pepper powder, 3 tbsp Worchester shire sauce and 1 tsp brown sugar. Cook till sauce thickens. Keep aside.
- In a pan heat 2 tbsp butter with 2 tbsp oil. Add in 4 tbsp flour and fry well.Boil 250 ml milk in a pan, add in roasted flour mixture and cook till thickens. Now add a pinch of ground nutmeg and a little salt. Mix well.
- Now in an oven proof dish spread baked vegetables.Top with tomato chicken sauce.Now spread 3 beaten eggs on top. Also spread prepared white sauce.Cover with 1 packet grated cheese.Lastly bake in a preheated oven on 200 degrees for 15 – 20 minutes till golden brown.
