Poached egg salad


Ingredients
  • Brown egg 2-3 slices
  • Capsicum 1
  • Spring onions 1
  • Eggs 2
  • Tomatoes 2
  • Salad leaves a few
  • Radish 3-4
  • Iceberg lettuce ½
  • Oil 1/4cup
  • Parmesan cheese slice 50g
  • Carrot 1
  • Fruit vinegar 1tbsp
  • Red chili powder 1tbsp
  • Black pepper powder 1/4tsp
  • Olive oil 3tbsp
  • Water as required
  • Salt as required
Method:-
  • In a frying pan add ¼ cup oil and fry the red chili powder for a few seconds and turn the flame off.Now chop the iceberg lettuce and the salad leaves and mix them together in a salad bowl. Add the deiced tomatoes, 3-4 sliced radishes, finely chopped capsicum,1 finely chopped carrot, and chopped spring onions. Mix well.
  • Transfer the prepared chili oil to another pan.Cut the brown bread into cubes and fry in the chili oil. When the bread is nice and crispy remove and place in a platter.Heat 3tbps of olive oil in a separate pan and fry the finely chopped garlic cloves until golden brown.
  • Now mix in 1tbsp vinegar, 1/4tsp black pepper powder and salt as required. Now pour the dressing in the salad bowl. Add the crispy bread cubes and the sliced Parmesan cheese.
  • Now boil water in a pan. Crack the egg open in a bowl .Place the cup near the surface of the water and gently drop it in. When the egg whites are cooked remove the egg with the help of a spoon.Place the prepared salad in a salad platter and place the egg on top. Slightly break open the yolk and serve.
