Hot and Sour Thai Soup


Ingredients
  • Prawns 100 gm
  • Lemon skin half
  • Chicken stock 2 glasses
  • Spring onion 1
  • Fresh red chilies 2
  • Chicken cubes 2
  • Curry leaves 1 – 2
  • Black mushrooms 3 – 4
  • Ginger sliced 1 piece
  • Soya sauce 1 tbsp
  • Corn flour 1 tbsp
  • Oil 1 tbsp
  • Lemon grass ½ tsp
  • Fish sauce 2 tbsp
  • Lemon juice 3 tbsp
  • Coriander leaves as required
  • Salt to taste
Method
  • Heat 1 tbsp oil in a wok, add 1 piece of sliced ginger, 2 fresh red chilies, 100 gm prawns and 1 – 2 curry leaves. Sauté for few minutes.Fry well till color of prawns turn to pink. Add 2 glasses of chicken stock and 2 chicken cubes.
  • Then add 3 tbsp lemon juice, 2 tbsp fish sauce, 1 tbsp soya sauce, salt to taste, half lemon skin and ½ tsp lemon grass.
  • Cook well, now add 1 tbsp corn flour dissolved in a little water. Cook till thickens.Pour soup in a bowl, add 1 chopped spring onion leaves and coriander leaves as required. Serve hot.
