Hot and Sour Thai Soup
Ingredients
- Prawns 100 gm
- Lemon skin half
- Chicken stock 2 glasses
- Spring onion 1
- Fresh red chilies 2
- Chicken cubes 2
- Curry leaves 1 – 2
- Black mushrooms 3 – 4
- Ginger sliced 1 piece
- Soya sauce 1 tbsp
- Corn flour 1 tbsp
- Oil 1 tbsp
- Lemon grass ½ tsp
- Fish sauce 2 tbsp
- Lemon juice 3 tbsp
- Coriander leaves as required
- Salt to taste
Method
- Heat 1 tbsp oil in a wok, add 1 piece of sliced ginger, 2 fresh red chilies, 100 gm prawns and 1 – 2 curry leaves. Sauté for few minutes.Fry well till color of prawns turn to pink. Add 2 glasses of chicken stock and 2 chicken cubes.
- Then add 3 tbsp lemon juice, 2 tbsp fish sauce, 1 tbsp soya sauce, salt to taste, half lemon skin and ½ tsp lemon grass.
- Cook well, now add 1 tbsp corn flour dissolved in a little water. Cook till thickens.Pour soup in a bowl, add 1 chopped spring onion leaves and coriander leaves as required. Serve hot.
