Upside down fruit cake
Ingredients for the cake
- Sugar 2tbsp
- Crushed almonds 150g
- Sugar 150g
- Eggs 4
- Plain flour 60g
- Baking powder 1tsp
- Butter 100g
- For the topping
- Brown sugar 2tbsp
- Butter 2tbsp
- Pineapples 1slice
- Big raisins 25g
- Bananas 1
- Dates 50g
- Sugar 1tbsp
Method for topping
- Take a pan and melt the butter. Add the brown sugar and cook till it dissolves.Add the pineapple, raisins, bananas and dates. Cook for a further 2-3 minutes.Grease a mould and sprinkle some sugar. Pour the fruit mixture in the mould; make sure that it is leveled .In a bowl crack open the eggs and add the crushed almonds and sugar. Beat with an electric beater.
- When the sugar dissolves add the plain flour and baking powder. In the end add the melted butter.Pour the batter into the cake mould and heat in a pre hated oven at 180C for 25-30 minutes.When the cake is done and is golden brown in color remove from the oven and allow it to cool.Turn the mould upside down and serve.
