Upside down fruit cake


Ingredients for the cake
  • Sugar 2tbsp
  • Crushed almonds 150g
  • Sugar 150g
  • Eggs 4
  • Plain flour 60g
  • Baking powder 1tsp
  • Butter 100g
  • For the topping
  • Brown sugar 2tbsp
  • Butter 2tbsp
  • Pineapples 1slice
  • Big raisins 25g
  • Bananas 1
  • Dates 50g
  • Sugar 1tbsp
Method for topping
  • Take a pan and melt the butter. Add the brown sugar and cook till it dissolves.Add the pineapple, raisins, bananas and dates. Cook for a further 2-3 minutes.Grease a mould and sprinkle some sugar. Pour the fruit mixture in the mould; make sure that it is leveled .In a bowl crack open the eggs and add the crushed almonds and sugar. Beat with an electric beater.
  • When the sugar dissolves add the plain flour and baking powder. In the end add the melted butter.Pour the batter into the cake mould and heat in a pre hated oven at 180C for 25-30 minutes.When the cake is done and is golden brown in color remove from the oven and allow it to cool.Turn the mould upside down and serve.
