Mint Chicken Masala
Ingredients
- Chicken boneless ½ kg
- Spring onion 1
- Tomatoes boiled 4
- Water 1 cup
- Ginger chopped 1 piece
- Garlic chopped 3-4 cloves
- Turmeric 1 tsp
- Crushed cumin seeds 1 tsp
- Coriander seeds crushed 1 tsp
- Chili powder 1 tsp
- Crushed red pepper 1 tbsp
- Lemon juice 2 tbsp
- Coriander leaves 2 tbsp
- Mint leaves 2 tbsp
- Oil 3 tbsp
- Salt to taste
Method
- Cut ½ kg chicken into strips, finely chop 1 spring onion and keep aside.Heat 3 tbsp oil in pan, add 3 – 4 cloves of chopped garlic and 1 piece of chopped ginger, fry till golden brown.Add chicken strips and fry for 2 – 3 minutes till its color change.Add 4 boiled and chopped tomatoes, 1 tbsp crushed red pepper, 1 tsp turmeric, 1 tsp crushed cumin seeds, 1 tsp crushed coriander seeds, 1 tsp chili powder and salt to taste. Fry for 1 – 2 minutes.
- Add 1 cup water, cover and cook on low flame for 10 – 15 minutes.Now remove lid, add 2 tbsp chopped coriander leaves, 2 tbsp mint leaves and 1 chopped spring onion. Fry well and dish it out, serve hot.
