Baby cook chicken


Ingredients
  • Small chicken with skin 2
  • Coriander 1/4bunch
  • Fresh red chili 2-3
  • Coconut milk 1/2cup
  • Garlic 4-5 cloves
  • Curry leaves a few
  • Ginger one medium piece
  • Black pepper powder 1tsp
  • Lemon juice 1tsp
  • Soya sauce 2tbsp
  • Salt as required
Method
  • In a blender blend together 4-5 cloves of garlic along with ¼ bunch coriander2tbsp soya sauce and 1tsp red chili powder.Add a small amount of water to form a smooth paste Add salt and pepper as required.Apply the marinade to the chicken .
  • Then stuff the chicken with a piece of sliced ginger, 2chopped spring onions,1tsp lemon juice and a few coriander leaves.Pour ½ cup coconut milk over the chicken.
  • Fill an oven baking dish with water and place the chicken tray in itHeat in a preheated oven at 180C for 15 to 20 minutes.
  • Pour a little coconut milk over the chicken and sprinkle some sesame oil.Bake the chicken again for a few minutes or until it turns golden brown in color.Serve the baby cake chicken with rice.
