Tomato ketchup


Ingredients
  • Red ripe Tomatoes 2 ½ kg
  • Onion 1 coarsely chopped
  • Ginger 2 inch piece coarsely chopped
  • Garlic 4 cloves
  • Cinnamon 1 inch stick
  • Black pepper 6
  • White cumin 1 tsp
  • Cloves 4
  • Black cardamom 2
  • Brown vinegar 1 cup
  • Sugar 250gm
  • Salt 1 tsp
  • Chili powder 1 tsp
Method
  • Wash tomatoes well cut into thick cubes, put in a pan cover and cook without water, remove, sieve well discard the seeds peel, make a spice bag with chopped onion, chopped ginger garlic, cinnamon stick, black pepper, cumin seeds, cloves and black cardamom, add this spice bag to the tomato pulp with vinegar, sugar, salt and chili powder, cook for at least 20 to 25 minutes till ketchup thick, remove and discard the spice bag, fill ketchup in sterilized bottles.
