Soup of the day
Ingredients
- Chicken stocks 8 cups
- Sweet corn ½ cup
- Chicken thinly sliced 1 cup
- Onion 2 tbsp chopped
- Potato ½ cup finely cubed
- Carrots ½ cup finely cubed
- Mushrooms thinly sliced 2 tbsp
- Finely chopped parsley 1 tbsp
- Macaroni tiny shaped boiled ½ cup
- Butter 2 tbsp
- Oil 2 tbsp
- Corn flour 4 tbsp
- Water ½ cup
- Milk ¼ cup
- Salt 1 tsp
- White pepper ½ tsp
- Sugar 1 tsp
- Croutons and cream to serve
Method
- Heat butter and oil, fry onion, chicken, potato and carrots for 5 minutes, do not brown add in stock with salt, white pepper and sugar, cook for 10 minutes till potatoes tender add sweet corn, mushrooms and macaroni when soups boiling thickens soup with corn flour mixed into a paste with water and milk, stir continuously till soup thick, remove, serve with croutons, parsley and fresh cream.
