Fruit filled boats


Ingredients for boats
  • Flour 8 ounces
  • Butter 4 ounces
  • Caster sugar 2 ounces
  • Egg 1
Ingredients for filling
  • Fruit cocktail 1 tin
  • Whipped cream 1 cup
Method
  • Beat butter and sugar till fluffy add egg, beat for 1 minute, fold in the flour, mix lightly and form into a dough adding chilled water if required, leave it in fridge for 10 minutes, roll dough and line the boat tins, prick the size and base, bake blind on 190 degree C for 15 minutes, remove from tin, cool arrange fruit cocktail, decorate with cream, pipe along the edges along boat.
