Dundee cake
Ingredients
- Butter 6 ounces
- Caster sugar 6 ounces
- Eggs 3
- Vanilla essence 1 tsp
- Flour 8 ounces
- Baking powder 1 ½ tsp
- Milk ¼ cup
- Currents 4 ounces
- Raisins 2 ounces
- Almonds 2 ounces sliced
- Almonds 2 ounces whole blanched
- Mixed peel 2 ounces
Method
- Sieve together flour and baking powder, beat butter and sugar till light and fluffy, add eggs 1 at a time alternating with a tablespoon of flour each time add milk, gently fold in the remaining flour and the dry fruits, cover the top with blanched whole almonds, bake in a oven on 150 degree C for 1 hour.
