Dundee cake


Ingredients
  • Butter 6 ounces
  • Caster sugar 6 ounces
  • Eggs 3
  • Vanilla essence 1 tsp
  • Flour 8 ounces
  • Baking powder 1 ½ tsp
  • Milk ¼ cup
  • Currents 4 ounces
  • Raisins 2 ounces
  • Almonds 2 ounces sliced
  • Almonds 2 ounces whole blanched
  • Mixed peel 2 ounces
Method
  • Sieve together flour and baking powder, beat butter and sugar till light and fluffy, add eggs 1 at a time alternating with a tablespoon of flour each time add milk, gently fold in the remaining flour and the dry fruits, cover the top with blanched whole almonds, bake in a oven on 150 degree C for 1 hour.
