Chicken and mushroom crepes


Ingredients for pan cake
  • Flour 1 cup
  • Eggs 2
  • Milk ½ cup
  • Salt ¼ tsp
  • Water as required
Method for pan cake
  • Make batter with 1 cup Flour, 2 Eggs, Milk ½ cup, Salt ¼ tsp, Water as required, strain batter and make pan cakes.
Ingredients for cheese sauce for topping
  • Cream cheese 1 tbsp heaped
  • Fresh cream 2 tbsp
Method for topping
  • In a saucepan put cream and cream cheese together, slightly cook till warm.
Ingredients for filling
  • Chicken breast finely chopped in tiny cubes 1 ½ cup
  • Butter 1 tbsp
  • Onion 2 tbsp
  • Flour 2 tbsp
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Soya sauce 1 tbsp
  • Worcestershire sauce 1 tbsp
  • Mushrooms finely chopped 2 tbsp
  • Cream ½ cup
  • Water ½ cup
  • Parsley finely chopped 1 tbsp
Method
  • Heat butter fry onion till soft add finely chopped chicken fry for 2 minutes, add in flour with salt, black pepper, soya sauce, Worcestershire sauce and water and cook till thick, fold in mushrooms and cream, cook till thick and saucy, remove. Mix in 1 tbsp chopped parsley, make pan cakes of dinner plate size; fill with above filling roll into a square serve with cheese sauce topping with chopped parsley and black pepper crushed.
