Almonds soufflé


Ingredients
  • Eggs 2 separated
  • Vanilla essence ½ tsp
  • Gelatin 1 tbsp dissolved in ¼ cup water
  • Milk 1 ½ cup
  • Cream 8 ounces whipped
  • Sugar 4 ounces
  • Vanilla Custard powder 1 tbsp
Method
  • Mix 2 ounces sugar, egg yolk, custard powder and a little milk and make a paste, put this paste in the remaining milk and cook on low flame stirring all the time. When it start getting thick remove from fire and cool add in dissolved gelatin, beat egg white stiff with remaining 2 ounce sugar, fold in the custard also fold in the whipped cream, mix all well, pour in a mold and set till firm, over turn, sprinkle with almond crunch and decorate with fresh cream.

  • Sugar 4 ounces
  • Almonds 2 ounces
Method for almond crunch
  • In a pan add sugar cook on low flame till melts add almonds, mix well, remove in a greased tray let it set till firm, crush and use.
