Foil Baked Rice
Ingredients
- Boiled rice ½ kg
- Chicken boneless ½ kg
- Spring onion 250 gm
- Foil paper 1
- Carrot 1
- Capsicum 1
- Green chilies 6
- All spice 1 tsp
- Black pepper 1 tsp
- Ginger garlic paste 1 tbsp
- Oregano ½ tsp
- Salt ½ tsp
- Chili powder 2 tbsp
- Tamarind pulp 2 tbsp
- Vinegar 2 tbsp
- Butter 2 tbsp
- Oil 2 tbsp
- Coal 1 piece
Method
- Cut each chicken breast into two pieces, marinate with 2 tbsp chili powder, 2 tbsp tamarind pulp, 1 tsp all spice, ½ tsp salt, 2 tbsp vinegar and 2 tbsp ginger garlic paste for 1 hour.In pan heat 2 tbsp oil, add marinated chicken, cover and cook till chicken is tender.
- Now add 1 chopped carrot, 1 chopped capsicum, 250 gm chopped spring onion leaves and 6 chopped green chilies. Mix well and turn the flame off.Now spread boiled rice on a foil paper, sprinkle with 1 tsp black pepper, ½ tsp oregano leaves and ½ tsp salt.
- Now spread chicken vegetable mixture on top of rice. Give dum of coal, also put 2 tbsp butter on top.Cover the foil paper and bake in a preheated oven of 200 degrees for 20 minutes.Foil baked rice are ready to serve.
