Chocolate chip cake
Ingredients
- Butter softened 2/3 cup
- Sugar 1 ¾ cup sugar
- Flour 3 cups
- Baking powder 3 ½ tsp
- Salt ½ tsp
- Vanilla essence 1 ½ tsp
- Milk 1 1/3 cup
- Mini chocolate chips 1 cup
- Egg whites 4
- Icing sugar sifted 1 ½ cup
- Soft butter 1 tbsp
- Vanilla 1 tbsp
- Milk 2 tbsp
Method
- Beat 2/3 cup butter and 1 ¾ cup sugar until light and fluffy, sift together 3 cups flour, 3 ½ tsp baking powder and ½ tsp salt, add alternately to cream mixture with 1 1/3 cup milk add 1 ½ tsp vanilla essence, stir in 1 cup chocolate chips, in another bowl beat 4 egg whites until stiff peak form, gently fold egg whites into cream mixture, pour in a greased and floured Bundt pan, bake on 180 degree C for 50 minutes, cool in pan for 10 minutes. Invert on a serving platter and cool completely. Top with vanilla glaze.
Method for vanilla glaze
- In a small bowl combine 1 ½ cup sugar, 1 tbsp butter, 1 tbsp vanilla, add 2 tbsp milk gradually to achieve desired consistency, stir until smooth, drizzle on cooled cake.
