Mango Tartlets


Ingredients for Tartlets
  • Flour 8 ounce
  • Butter 4 ounce
  • Caster sugar 2 ounce
  • Egg yolk 1
  • Chilled water to make dough
Ingredients for Vanilla Cream
  • Milk 2 cups
  • Sugar 4 tbsp heaped
  • Corn flour 2 tbsp
  • Vanilla essence ½ tsp
  • Mango balls as required
  • Whipped cream for decoration
Method for Tartlets
  1. Beat 4 ounce butter with 2 ounce caster sugar, add 1 egg yolk, beat well, add 8 ounce flour, beat till mixture resembles crumbs, add chilled water and knead lightly to form a dough, rest for 30 minutes, roll and cut in small rounds, spread in small tart molds, bake in a pre heated oven 190 degrees C for 20 minutes, remove and cool, fill with prepared vanilla cream, decorate sides with cream and mango balls in centre.
Method for Vanilla Cream
  1. In sauce pan put together 2 cups milk, 4 tbsp sugar and boil, add 2 tbsp corn flour paste and cook till sauce thickens, remove from fire, add ½ tsp vanilla essence and use as required.
