Creamy Egg Crockets
Ingredients
- Butter 2 tbsp
- Onion chopped 2 tbsp
- Flour 4 tbsp
- Milk 1 cup
- Coriander leaves chopped 2 tbsp
- Hard boiled eggs (mashed) 4
- Fresh cream 2 tbsp
- Lemon juice 1 tbsp
- Salt ½ tsp heaped
- Black pepper ½ tsp
- Mustard ½ tsp
- Bread crumbs 2 cups
- Eggs 2
Method
- Heat 2 tbsp butter in a pan, add 2 tbsp onion, fry until soft, stir in 4 tbsp flour with ½ tsp salt, ½ tsp pepper and ½ tsp mustard powder, remove from heat, gradually stir in 1 cup milk, stir over low heat until mixture boils and thickens, cool, add in 2 tbsp coriander leaves, 2 boiled and mashed eggs, 2 tbsp cream, 1 tbsp lemon juice and mix well, shape into crockets, dip in beaten eggs, roll in bread crumbs, deep fry till light golden.
