Creamy Egg Crockets


Ingredients
  • Butter 2 tbsp
  • Onion chopped 2 tbsp
  • Flour 4 tbsp
  • Milk 1 cup
  • Coriander leaves chopped 2 tbsp
  • Hard boiled eggs (mashed) 4
  • Fresh cream 2 tbsp
  • Lemon juice 1 tbsp
  • Salt ½ tsp heaped
  • Black pepper ½ tsp
  • Mustard ½ tsp
  • Bread crumbs 2 cups
  • Eggs 2
Method
  1. Heat 2 tbsp butter in a pan, add 2 tbsp onion, fry until soft, stir in 4 tbsp flour with ½ tsp salt, ½ tsp pepper and ½ tsp mustard powder, remove from heat, gradually stir in 1 cup milk, stir over low heat until mixture boils and thickens, cool, add in 2 tbsp coriander leaves, 2 boiled and mashed eggs, 2 tbsp cream, 1 tbsp lemon juice and mix well, shape into crockets, dip in beaten eggs, roll in bread crumbs, deep fry till light golden.
