Vegetable Lentil Pulao
Ingredients
- Red lentils 1 cup
- Oil 1 cup
- Carrot 1
- Potatoes 2
- Finely chopped onion 2
- Lemon 2
- Large cardamom 2
- Green chilies 3
- Whole black pepper 4
- Finely chopped soya 1 bunch
- Finely chopped mint leaves ½ bunch
- Peas ½ cup
- Rice 2- 2 ½ cups
- Butter 1 tbsp
- Ginger garlic paste 1 tbsp
- Salt to taste
- Rice 2 1/2cups
Method
- Heat oil in a pan, add 2 finely chopped onions and fry till they turn golden brown.Remove half of the fried onions for garnishing.To the remaining brown onions add 1 tbsp ginger garlic paste, 4 whole black pepper, 2 large cardamoms and 3 finely chopped green chilies and fry well.
- Heat oil in a separate pan and fry the 2 diced potatoes along with 1 chopped carrot and ½ cup peas.Add the vegetables to the masala mixture and add 1 bunch finely chopped soya, 2-2 ½ cups rice and 1 cup soaked red lentils, fry for 2-3 minutes then add 3 cups of water and cover the pan.
- Cook on a moderate flame .When the water dries add1 tbsp butter and simmer for around 10 minutesGarnish the vegetable pulao with the remaining brown onions and serve.
