Vegetable Lentil Pulao 


Ingredients
  • Red lentils 1 cup
  • Oil 1 cup
  • Carrot 1
  • Potatoes 2
  • Finely chopped onion 2
  • Lemon 2
  • Large cardamom 2
  • Green chilies 3
  • Whole black pepper 4
  • Finely chopped soya 1 bunch
  • Finely chopped mint leaves ½ bunch
  • Peas ½ cup
  • Rice 2- 2 ½ cups
  • Butter 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Salt to taste
  • Rice 2 1/2cups
Method
  1. Heat oil in a pan, add 2 finely chopped onions and fry till they turn golden brown.Remove half of the fried onions for garnishing.To the remaining brown onions add 1 tbsp ginger garlic paste, 4 whole black pepper, 2 large cardamoms and 3 finely chopped green chilies and fry well.
  2. Heat oil in a separate pan and fry the 2 diced potatoes along with 1 chopped carrot and ½ cup peas.Add the vegetables to the masala mixture and add 1 bunch finely chopped soya, 2-2 ½ cups rice and 1 cup soaked red lentils, fry for 2-3 minutes then add 3 cups of water and cover the pan.
  3. Cook on a moderate flame .When the water dries add1 tbsp butter and simmer for around 10 minutesGarnish the vegetable pulao with the remaining brown onions and serve.
