Savory fried rice


Ingredients
  • Boiled rice 1/2kg
  • Egg 1
  • Fresh red chilies 2
  • Garlic cloves 4
  • Cauliflower 2
  • Oil 1/2cup
  • Cashew nuts 50g
  • Peas 250g
  • Black pepper 1tsp
  • Brown sugar 1tbsp
  • Vinegar 1tbsp
  • Salt 1/2tsp
  • Soya sauce 2tbsp
Method
  1. Heat1/2cup oil in a wok and fry 50 g of grated coconut along with 50g of cashew nuts.When the starts to change, turn the flame off and remove the cashew nuts and coconut.In the same pan add 250g peas and fry for 1-2 minutes. Remove the peas.
  2. Now add 4 minced garlic cloves in the same pan and fry until the aroma is given off..Add 1 cup cauliflower and 1 beaten egg. Mix well.
  3. Lastly add 1/2kg boiled rice, 1tsp black pepper,1tbsp brown sugar,1/2tsp salt, 2tbsp soya sauce and 1 tbsp vinegar.Mix well and dish out.
  4. Garnish with fried peas, coconut and cashew nuts.
