Nauratan Pulao


Ingredients
  • Rice 500 gm
  • Whole mixed spices 1 tbsp
  • Cumin seeds 1 tsp
  • Water 5 cups
  • Bay leaf 1
  • Peas ½ cup
  • Onion sliced 1
  • Garlic crushed 1 tbsp
  • Ginger chopped 1 tbsp
  • Cauliflower cut into small flower 1 cup
  • Sweet corn ½ cup
  • Beans ½ cup
  • Capsicum ½ cup chopped
  • Tomato 1 chopped in cubes
  • Cottage cheese cubes ½ cup
  • Green chilies 2 chopped
  • Salt 1 ½ tsp
  • Olive oil ¼ cup
  • Carrot 1 cubed
  • Potato 1 cubed
Method
  1. Soak rice for 30 minutes in water, pan fry cottage cheese in 2 tbsp olive oil, remove and soak in hot water for 30 minutes, heat ¼ cup olive oil add 1 tbsp whole spices with sliced onion, chopped ginger garlic paste, green chilies, fry till light golden, add potatoes, carrots, beans, peas, cauliflower and fry for 5 minutes, add 1 cup water, cover and cook till vegetables ½ done, add soaked rice with bay leaf, cumin seeds, green chilies, and 3 cups water, cover and cook for 15 minutes till done. Remove in a platter, serve garnish with cottage cheese.
