Mango Filled Pancakes
Ingredients for pancakes
- Flour 1 cup
- Eggs 2
- Milk 1 cup
- Water as required
- Ingredients for filling:
- Mango Jam 3tbsp
- Water ½ cup
- Corn flour 1 tsp heaped
- Mangoes finely chopped 1 cup
- Fresh cream whipped for decoration
- Icing sugar to dust
Method for filling
- In sauce pan add 3tbsp mango jam with ½ cup water. Mix and cook till boiling. Thicken mixture with 1 tsp heaped corn flour paste. Remove cool.
- Add 1 cup finely chopped mangoes. Fill in pancakes and serve immediately dusted with icing sugar and decorate with swirls of fresh cream.
Method for pancakes
- In a bowl mix 1 cup flour, 2 eggs, 1 cup milk and water.Sieve and then make pancakes in a non-stick frying pan.
