Open Chicken and Mushroom Omelet


Ingredients
  • Eggs 3
  • Oil ¼ cup
  • Mushroom 3 sliced
  • Cheese grated 2 tbsp
  • Spring onion finely chopped 2 tbsp
  • Salt ¼ tsp
  • Black pepper ¼ tsp
  • Chicken tikka chunks finely chopped 3 tbsp
  • Green chilies 1 chopped
  • Tomato chopped in tiny squares without seeds 2 tbsp
Method
  1. Beat eggs in a bowl with whisk add salt and pepper to taste, chop all the vegetables and keep aside, heat oil in a fry pan add onion, mushrooms, green chilies, tomato cook for 30 seconds add pinch of salt and pepper, remove and keep aside. 
  2. Heat 1 tbsp butter in a frying pan, pour the beaten eggs, Spread eggs evenly, spread with grated cheese on the omelet then cook onion mixture evenly, gently press the vegetable mixture on the cheese, remove and serve open with hot toast.
