Mexican Salad Roll


Ingredients for tortillas
  • Wheat flour 2 cups
  • Salt ¼ tsp
  • Olive oil 1 tbsp
  • Baking powder ¼ tsp
  • Water to knead as required
Ingredients for filling
  • Ice berg lettuce 2 cups sliced
  • Boiled eggs 4 (use only whites)
  • Tomato 1 medium chopped
  • Capsicum 1 medium chopped
  • Onion 1 small sliced
  • Cottage cheese 1 cup
  • Kidney beans ½ cup
  • Salt ½ tsp
  • Crushed black pepper ½ tsp
  • Ketchup 2 tbsp
  • Lemon juice 1 tbsp
Method to make tortillas
  1. In a bowl mix together 2cups wheat flour, 1/4tsp salt, 1tbsp olive oil, 1/4tsp baking powder and knead with Luke warm water into a smooth dough.
  2. Cover and leave the dough to rise for 30 minutes .Divide the dough into 4 balls, roll into the size of a dinner plate and cook on a griddle till done.
Method for salad roll
  1. In a bowl mix together 2cups Ice berg lettuce sliced, 4 Boiled eggs (use only whites), 1 medium chopped tomato, 1 medium chopped capsicum, 1 chopped onion, 1cup cottage cheese,1/2cup kidney beans,1/2tsp salt, 1/2tsp crushed black pepper,2tbsp Ketchup,1tbsp lemon juice
  2. Spread each tortilla with salad, roll up firmly. Serve immediately.
