Mexican Rice with Kebab


Ingredients for rice
  • 300 grams rice
  • 1 cup peas
  • 4 green chilies
  • 4 red chilies
  • ¼ cup oil
  • 2 tbsp turmeric powder
  • Salt to taste
Ingredients for mince meat
  • 300 grams mince meat
  • 1 onion
  • 1 egg
  • 3 green chilies
  • 3 red chilies
  • 4 cloves of garlic
  • ½ cup bread crumbs
  • ½ packet mozzarella cheese
  • 1 tbsp crushed black pepper
  • 4 tbsp oil
  • Salt to taste
Method
  1. Add water, 2 tbsp turmeric powder and 300 grams rice to a pan and boil. Strain in a strainer and strain away excess water. In a pan, heat oil and stir 4 sliced green chilies, 4 fresh red chilies and 1 cup boiled peas in it. Then add boiled rice to it and allow simmering for 2 to 3 minutes. 
  2. For kebabs, add 300 grams mince meat, 3 green chilies, 3 fresh red chilies, 4 chopped cloves of garlic, crushed black pepper, a beaten egg and an onion to a chopper and mix. Also add ½ cup bread crumbs to the mixture. Now take a small portion of the mixture and from kebabs. 
  3. Grease an oven tray and place kebabs on the tray. Top them with ½ packet mozzarella cheese and bake in a pre heated oven at 180 c for 8 to 10 minutes. 
  4. When top most layer is a nice golden brown, kebabs are ready. Take out rice on a serving platter and put kebab n top. Delicious Mexican Rice with Kebab is ready to serve.
