Al Baik Chicken


Ingredients
  • 1 whole chicken with skin
  • 2 lemons
  • 2 eggs
  • 1 cup corn flour
  • 2 cups plain flour
  • 1 tbsp ginger paste
  • ½ tsp red food color
  • ½ tsp cinnamon powder
  • 2 tbsp garlic paste
  • 4 tbsp red chili powder
  • 4 tbsp olive oil
  • Oil for frying
  • Salt to taste
Method
  1. Cut whole chicken into 8 pieces and make sure that the skin does not remove. Mix together 4 tbsp red chili powder, juice of 2 lemons, ½ tsp cinnamon powder, 4 tbsp olive oil and salt to taste and fill in syringe. 
  2. Marinate chicken pieces with 2 tbsp garlic paste, 1 tbsp ginger paste and salt to taste. Beat 2 eggs in a bowl and keep aside. Dip chicken in beaten eggs and coat with plain flour. Repeat the process. 
  3. Fill the chicken with prepared spice mix with a syringe. Fry in a covered pan for 10 to 15 minutes. Al Baik Chicken is ready to serve.
